The high proportion of forest in the Duchy of Lauenburg also has an impact on regional menus. The nature park Lauenburgische Seen and the Sachsenwald forest provide fresh delicacies from local forests, such as roe deer, fallow deer, wild boar, venison and hare.
The end of winter marks the start of the speciality calendar. In spring, the fish migrate from the North Sea to spawn in the Elbe. They used to be considered a ‘poor man's food’, but today they are a gourmet tip, available mainly in Lauenburg and Geesthacht.
When the large whitefish are caught in the nets of fishermen on Lake Ratzeburg or Lake Schaal, summer is here. Between July and August, this salmon-like fish is a delicacy for gourmets, whether fresh, fried, steamed or smoked. Numerous restaurants around the lakes serve fresh whitefish.
